Indigo Ridge is her alpine-hybrid cheese, a Gouda style with a Gruyere flair.  It melts beautifully and is a wonderful snacking cheese. Indigo Ridge pairs with everything from strawberry jalapeño jam to ham to sparkling wines to dark chocolate. How’s that for versatility? Aged six to eight months. This has qualified as an American Original by the American Cheese Society.
