Keystone is a Texas version of Italian tomme.  It is her most versatile cheese.  Use it in your pasta sauce, grate it over a salad, put it in a sandwich, eat it with some fresh fruit, or have it with a nice glass of wine.  This cheese melts beautifully and works well in a multitude of recipes.
